Is this signature legally binding?

It's an image signature — the same legal weight as a hand-signed page you scan. For qualified electronic signature (eIDAS QES, DocuSign-level), a certified provider is required. For most everyday paperwork, an image signature is what's expected.

Should I flatten the PDF after signing?

Yes if you want the signature to be non-removable. After signing, run the file through Flatten PDF — the signature will bake into the page content and can't be edited or removed by the recipient.
